Somehow, I have changed my normal workspace/ tool pallet layout in my drawings, and can not figure out how to get back to that version. I think I somehow did a clean screen and lost my normal docked tools. Now, after fiddling with it for about an hour... I want to go back to a version that has my old normal workspace. Is that possible without having to rebuild it all? For instance, can I go back to an earlier saved version from yesterday that will have the normal workspace?

Did you try pressing CTRL+0 (zero) to toggle the Clean Screen setting?  Your Ribbon and Toolbars should be just as they were when you inadvertently maximized the drawing area.

Save your workspace as your name then the default are always there also, we had individual preferences by staff toolbars etc so you can make a script that is all your preferred toolbars, palette etc. The just load them all in one go, yes have lost menu's etc before.

 

Did you know you ca make a custom menu with a mix and match of all workspaces ? Did that for Civ3D had commands that would often use in my drafting workspace so no need to change workspace.

 

-toolbar modify show

-toolbar vports show

Might you want to check and possibly change your Workspace Settings?

As shown in the screenshot

I don't have Auto save turned on if you do something wrong in say a custom menu and it screws up the menus, closing Cad means you return to the screwed up workspace and its a pain to have to go into CUI and look for all the CUIX files that no longer exist, I have had "File" and that was it all menu's gone !
