It seems that it is attached to the reference plane, though the plane is not labeled.

 

Also, can I change the name of the Dimension Label Parameter from "Length of Cube" to just "Length"? Or is it stuck once I create it?

I see what you did. You have to place the Height dimension where it hits the Reference Plane, not the Reference Level. Watch the video... notice I use the Tab key to cycle through the overlapping items so I make sure the dimension hits the Reference Plane and not the Level. Once that is complete, then the grip is now active. Hope this helps!

Yes you most certainly can change the name of Parameters. By all means, edit away. :)
